Ingredients
1 tbsp chili powder
1 tsp cumin
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp onion powder
1 tsp salt
1/2 tsp ground pepper
1 tbsp olive oil
8 oz of ground beef
8 oz of steak cut into ~0.5 inch cubes (skirt, sirlion, etc will all work)
~ 16 oz salsa
2 tablespoons tomato paste
~4 fresh jalapeno peppers, seeded and chopped
8 oz of soaked kidney beans
8 oz sweet corn (fresh > frozen >>> canned)
1 bell pepper finely chopped
4 cloves of garlic finely chopped
0.5 - 1 cup of water
1/2 onion (white > yellow > red) diced
freshly shredded cheddar cheese
Instructions
Combine the spices in a small bowl and set aside. You have now created chili seasoning.
Heat the olive oil up over medium heat in a large dutch oven
Brown the ground beef followed by the steak in the dutch oven
Add the salsa, tomato paste, jalapenos, and bowl of chili seasoning to the meat in the dutch oven. Bring to a boil over medium high heat, stirring constantly.
Reduce the heat to a simmer and add the beans, corn, bell pepper, garlic, and enough water to bring the liquid up to the top of the mixture.
Bring the contents up to a simmer. Leave over low heat and stir occasionally for at least one hour. Two hours would be even better.
Serve in bowls topped with diced onion and cheddar cheese. Add sour cream, corn bread, tortilla chips, corn chips or whatever else floats your boat.
Makes somewhere between 4 and 8 servings depending on how much you believe in yourself while you eat.
Substitute an additional 8 oz of soaked beans (kidney or black) for ground beef and steak to make a vegetarian variation.
